Two new Da Noi crew members

This week our news post is dedicated to our new team members, Kely and Matt.

Kely will start later this week (on Thursday) and brings her Italianness mixed to a Dominican influence, a powerful mix! She worked in several restaurants before including a few in London of a similar style and size as Da Noi. You’ll love her brightness and attention to detail!

Matt has already joined the gang a couple of weeks ago and perfectly fits with our vision and way of working. You should know that Matt’s interview at Da Noi lasted 3+ hours and ended up actually in Matt interviewing us (he had circa 40 questions all written down to ask!!). You will love his corteous manners and humour spikes!

RECIPE: Il Bunet

To shake things a little bit this week we thought about publishing the recipe of one of the most iconic desserts for us. The “Bunet” not only describes tradition, family and taste for us in the North-West of Italy. It also is one of the key dishes constantly featuring on Chef Valentina’s menu!

Like with every passionate Chef, you have to twist Chef Valentina’s arm to get her to hand out a recipe.. but here it is for you:

Ingredients (12 slices):

500g milk

170g sugar

50g cocoa

50g Amaretti biscuits + a couple more

4 eggs

Method:

‎Heat 100g of sugar with a drop of water in a saucepan, until it starts to caramelize. Pour it on the bottom of a 1 litre rectangular pudding mould. Crumble the Amaretti to very fine pieces. ‎

Whisk the eggs in a bowl and add the remaining sugar. Add the crumbled Amaretti and the sifted cocoa. Whisk everything together, taking care not to incorporate too much air, so as to obtain a smooth and homogeneous pudding, without bubbles. ‎

‎Then add the milk and continue stirring. Pour the mixture into the mould; bake it in a bain marie at 170°C for about 1 hour: the mould will have to be immersed in water for three quarters of its height.

Drain and let cool for at least 2 hours in the fridge. Flip the cake over a serving plate and garnish it with whole or crumbled Amaretti.‎

Getting ready to re-open our doors to you

Ha, Da Noi friends!

It’s exciting to think that we will be able to see you once again really soon at Da Noi.

The team has been working really hard these days to make sure we can bring the show on in style. Chef Valentina Aviotti and her team have started the preparation work for the Spring Menu, the front of house team are training up to the menu and the new wine list entries.. we have made a few little interior changes as well to warm up the atmosphere and make our “magic box” more inviting.

We will hold a soft opening night on Tuesday 18th with 6 course tasting menu ahead of the grand reopening on Thursday 20th. We are thrilled to share the the stories about it to a selected number of press invitees and trail everything out.

The diary is definitely filling up for May, June is booking up fast and some of you are pinning their spots for July and August. We thank you infinitely for that, we cannot wait to have you over at Da Noi to enjoy freedom again, together with some good food and wines. Bookings as usual available on Sevenrooms here.

OUR NEWS SECTION IS NOW LIVE!

After a long period planning out for it, our NEWS section is now live on our website. We always think about improving our customer experience at Da Noi Chester, from all points of view. As a result, we have decided to bring in a snippet about anything that happens in and around our restaurant.

We will publish a post every three Mondays to keep you in the loop with anything from new dishes, recipes, menus, initiatives, events and much more. We want you to come closer to us and get you curious about everything we do.

The interest around us is constantly growing and we have so much in store to share for the remainder of 2021 and beyond.

We will be good to start with so the first “News section” post will come through straight after this announcement..

In the making of our new clip

Friday April 30th has been a very intense day at Da Noi Chester!!

We had the pleasure and the honour of having Natural Selection Design on site filming and shooting for our new promo clip. These guys work with the most acclaimed people in hospitality (Tom Kerridge, Michael O’Hare, Gary Usher for instance). They are so laid back and equally hyper professional!

It was great to share our story and vision for Da Noi Chester and get them to feel our ethos throughout the full day work-yeah, we finished at 9pm.. Dan and George will now take all the cooking scenes, the stories, the pictures and start the editing work.

We just can’t wait to see the result and share it with you!
